Koshari Egyptian Street Food

Koshari is a vegan Egyptian street food made with rice, lentils, macaroni, chickpeas, tomato sauce, and crispy onions! It is a hearty, cheap, and easy dinner that is also perfect for meal prep.

Ingredients
  

Tomato Sauce

  • 1 15oz can Tomato Sauce
  • 1 Small Diced Onion
  • 3 cloves Garlic
  • 2 tbsp White Vinegar
  • 2 tsp cumin
  • 1 tsp coriander powder
  • 1 tsp chili flakes optional

Koshari

  • 1 can Chickpeas
  • 1 12 oz can Lentils
  • 1 Cup Rice
  • 1 Cup Macaroni Noodles
  • Crispy Onions

Instructions
 

  • Cook your rice any way you prefer and set aside. I used a rice cooker.
  • In a saucepan over medium heat, cook your onions and garlic with a little oil or butter until they start to brown.
  • Mix in the cumin, coriander, chili flakes (optional), and salt to taste
  • Reduce heat and mix in your tomato sauce and vinegar. Cover and let simmer for about 5 minutes.
  • Make your macaroni according to the box instructions and set aside.
  • Drain and rinse the canned chickpeas and lentils.
  • Serve as desired! I recommend serving "buffet style" allowing everyone to build their own bowl with the ingredients!
